Good news for your average Bruschetta and Baltimore this Meatless Monday

What are you eating on this Meatless Monday?  I found this Bruschetta recipe, submitted by Laurie Thompson, years ago on All Recipes, and it has never failed to amaze me or my guests.  It is very easy to make and is the most mouth-watering, dynamic bruschettta I have eaten.  Give it a whirl today:

Double Tomato Bruschettadoubletomatobruschetta

Ingredients:

  • 6 roma (plum) tomatoes, chopped
  • 1/2 cup sun dried tomatoes, packed in oil
  • 3 cloves minced garlic
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 cup fresh basil, stems removed
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 French Baguette
  • 2 cups shredded mozzarella cheese

Directions:

  1. Preheat the oven on broiler setting.
  2. In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper.  Allow the mixture to sit for 10 minutes.
  3. Cut the baguette into 3/4-inch slices.  On a baking sheet, arrange the baguette slices in a single layer.  Broil for 1 to 2 minutes, until slightly brown.
  4. Divide the tomato mixture evenly over the baguette slices.  Top the slices with mozzarella cheese.
  5. Broil for 5 minutes, or until the cheese is melted.

In other news over at Meatless Monday, the Baltimore City Public School System is going Meatless on Mondays!  Baltimore will become the first system in the country to go Meatless on Mondays.  Tony Gerachi, the food service director, is transforming Baltimore public schools:

The school system has introduced a wide variety of projects to ensure its students eat and learn about healthy, environmentally friendly choices. BCPS has teemed up with local farmers and distributors to provide students fresh, locally raised fruits, vegetables and milk.

Further, Tony led on starting the Great Kids Farm, a 33-acre teaching farm. Here, kids learn how to grow fresh foods, and make nutritional, environmentally-friendly choices.  Eventually, each school in the system will have its own garden.

So, if a whole school system can go meatless, you certainly can!

I’ must say, I am especially proud since Baltimore is my hometown.  I am looking forward to seeing changes in the health & nutrition of Baltimore City Public School system children.
